Hey guys! Today I’m sharing with you what I eat in a day: summer edition! I recently decided to try going vegetarian (purely to see what it’s like) and it’s been SO fun creating new recipes and brainstorming meal ideas that fit my new lifestyle! I watch a TON of “What I Eat In A Day” videos on Youtube, and I drew a lot of inspiration from my favorite bloggers! Also, please remember that everyone has different caloric needs and so what I eat in a day, may not be enough for what you eat!
Before every meal, I ALWAYS drink a tall glass of water. It’s so important to get enough water to keep your body hydrated, plus hydration contributes to clearer skin, more energy, plus tons of other health benefits!
For breakfast, I like to have something super fruity + filling to get me through the morning! Recently, I’ve been loving instant oatmeal (NO not the sugary flavored kind!) I buy the organic quick oats from my local grocery store and just make the oatmeal myself. Sometimes I’ll add in some protein powder if I know I didn’t get enough protein the day before. And of course, you can’t forget the fruit! Especially the summertime, I pile my fresh fruit on top of my oatmeal, but frozen fruit also works if I’m in a pinch. Other summer favorites are smoothies, protein shakes, and breakfast banana splits! Shown above is just some greek yogurt topped with frozen blueberries and strawberries.. so delicious and fruity!
Before I know it, lunchtime has come to! My rule when eating lunch is lean, clean and green! Recently, I’ve been loving meal-preppable lunches so one of my favorites is a chickpea salad with onions, cucumber, tomatoes, garlic, salt, and pepper! I’ll add a slice of avocado toast with it for a super delicious, filling, and simple meal! I often switch this out with my homemade lentil chili (which I make ahead of time) and kale/pesto spaghetti!
Ok but seriously, snack time is my absolute FAVE! I always try to have something low in sugar and definitely without caffeine! One of my weekly staples is cucumbers with a dip (salsa/guac/hummus) and add some cheese blocks for a filling, light, and on-the-go snack! If I’m feeling fancy, I sometimes use kale chips (which I make ahead of time) instead of cucumbers, or sometimes I’ll use carrots too!
Pro tip: when choosing a dip, be mindful of the ingredients. Homemade is ALWAYS better but sometimes it’s not an option, so always check your ingredients before purchasing! I recommend choosing something with only whole NATURAL ingredients you can pronounce, and not purchasing dips with added sugar.
Wow, it’s time for dinner! Also known as my favorite meal of the day because now we can go to bed! Haha. For dinner, I ALWAYS choose something lean, clean, and green. I also try to make sure I get my leafy greens in for the day! One of my favorite weeknight staples is the Sweet Kale Vegetable Salad from my local grocery store! It’s delicious, healthy, and super quick to make! I’ll also season some salmon with lemon + parmesan and just pop it in the oven for 20 minutes for a super filling and simple meal. If I’m feeling fancy, I might also make some drop biscuits using this recipe for an extremely yummy way to complete my meal.
Pro tip: If you’re short on time which I often am, I often just run to my nearest grocery store and pick up a premade salad mix! I love the ones with a healthy mix of greens that include some nuts to top it off! Just remember, if you’re choosing a premade salad, do NOT drench your greens with the included dressing, as it’s often full of sugar and extra ingredients.
